Tawny "Port" Dessert Wine
This is a wine 11 years in the making!
We have been cultivating a "stack" of fortified Barbera barrels since 2011. The older barrels of wine are topped up with wine from the younger barrels. This wine was bottled from the oldest barrel in the stack. The multi-year aging process through cold winters and hot summers results in a tawny color and flavors of golden raisin and fig.
Our stack of fortified wine barrels is now 13 years old. We blend young wine in to the top and slowly transfer aged wine down to the bottom in a "solera" style. We only bottle wines from the bottom of the stack which have reached maturity.
This wine presents a rich aroma of baking spices, including clove, cinnamon, and vanilla. On the palate, it reveals a savory character reminiscent of dried salami, accented by a touch of white pepper. The experience transitions into a sweet profile featuring cherry compote and dried prune, culminating in a finish of dark cocoa.
